Previous works on ancient olive oil and wine production in the ancient Mediterranean (Frankel 1999; Brun 2003b, 2004) and North Africa (Mattingly 1985; 1988ad; 1993; 1994; 1995; 2009; Mattingly and Hitchner 1993) have broadened our knowledge on specifications, techniques and scale of production of Roman presses. These works discuss how this significantly contributed to the success of the Roman economy and long-distance trade.
