Previous works on ancient olive oil and wine production in the ancient Mediterranean (Frankel 1999; Brun 2003b, 2004) and North Africa (Mattingly 1985; 1988ad; 1993; 1994; 1995; 2009; Mattingly and Hitchner 1993) have broadened our knowledge on specifications, techniques and scale of production of Roman presses.
